  • A first private dinner at Parabere with Chef Paco Ybarra. We explore his lifetime study: the flavors of the Lago Ligustinus—an ancient inland sea that once reached Seville but now exists only in the salt and silt of the lower Guadalquivir
  • To end the night: flamenco progresivo on piano by Rafael Marinelli, set against a private photography exhibit on the Sevillian Semana Santa

  • Dinner at La Castillería, the holy grail for dry-aged Retinta beef—the semi-wild cattle endemic to this coastline

We first met Gonzalo Gil Lavedra in the smoky courtyard behind a family’s butcher shop in the meat-obsessed pueblo of Temozón, Yucatán. Referred to us by Noma chef René Redzepi, Gonzalo had sweet-talked the family into taking us all behind the scenes of some of the best smoked meat in Mexico. His unassuming charm, curiosity, and ability to talk his way into and out of just about anything have made him a perfect addition to the League of Travelers.

In Seville’s old quarter of Barrio Alfalfa just five minutes from the Cathedral, a 17th-century palacio has been meticulously restored and converted into a small private luxury boutique hotel. The Gorge Watch

Perched over a 400-foot rift in the earth, the Parador de Ronda sits on the site of the city’s former 18th-century town hall and marketplace. While it retains the original clock and stone arcades of the old Casa Consistorial, the interior opens up into an expansive balcony over the Tajo gorge. Inside, the hotel houses an extensive collection of bullfighting art, tracing the tradition through a lens that shifts from Goya-era Romanticism to modern geometric abstraction.
