Somewhere in the pages of old agricultural records, Lee Geun-yi came across a largely forgotten chapter of Korean farming: more than 1,450 native rice varieties had once been cultivated across the peninsula, before Japanese colonial rule began in 1910. Most had since disappeared from Korean fields.
