Last week’s installment of Food Chain took us to Khon Kaen Province in northeastern Thailand. We had come from Bangkok, after earlier stops in Guadalajara, Ecuador, São Paulo, and Abruzzo. In Khon Kaen, after learning about the work of Arun Sala-Ngarm, the micro-scale beef producer beloved by some of Thailand’s top chefs, we wanted to sit down for a meal at the restaurant he recommended we move the Food Chain to next. Who wouldn’t want some grilled snakehead fish with spicy dipping sauce at See Na Nuan Café, washed down with an ice-cold bottle of Leo? But we never made it that far. The restaurant didn’t respond to our interview requests. Maybe next time.
