There may not be a single person in all of the Republic better qualified to know what to eat, at what time of year, and with whom, than Eugenio Signoroni, pictured above far left. After a long career at the iconic Slow Food that included editing the authoritative Osteria d’Italia guide, he branched out to write prolifically on Italian food culture in all parts of the boot. He is the host of Lievito Madre, one of Italy’s top food podcasts, and he lives in the heart of Piedmont. A perfect host for this journey.

We first met Gonzalo Gil Lavedra in the smoky courtyard behind a family’s butcher shop in the meat-obsessed pueblo of Temozón, Yucatán. Referred to us by Noma chef René Redzepi, Gonzalo had sweet-talked the family into taking us all behind the scenes of some of the best smoked meat in Mexico. His unassuming charm, curiosity, and ability to talk his way into and out of just about anything have made him a perfect addition to the League of Travelers and an ideal host for this journey in the country he now calls home.

Located in the middle of the family-run Fontanafredda vineyard in Serralunga d’Alba, Cascina Galarej is a lush former farmstead offering panoramic views of Langhe wine country. Set within the community of Villaggio Narrante, a 19th-century village founded by the son of King Vittorio Emanuele, the estate features an indoor-outdoor heated pool, a Finnish sauna, Turkish bath, and spa treatments with grape must from the vineyards.

Built by three brothers in 1903, Briethorn was one of the first hotels in Aosta Valley, welcoming many prominent guests including Toscanini.
