“Protecting those who support our food system and our restaurants is something that is important and close to us.”

— Michael Diaz de Leon, Molino Chido

Molino Chido was born from two worlds—de aquí y de allá. It’s a celebration of craft, culture, and community. Co-owners Tommy Lee and Michael Diaz de Leon bring together their shared love of Mexico City street food and the craft of nixtamal. Every tortilla starts with corn they grind themselves. Every dish reflects where they’ve cooked and whom they cook for.

Michael Diaz de Leon is a first-generation Mexican American chef and the cofounder of Molino Chido. Born on the Mexican border in El Paso, Texas, Michael spent his formative years navigating two cultures at once, developing an early affinity for community, connection, and storytelling through food. His latest project, created in partnership with Chef Tommy Lee, honors the humble taco through daily nixtamal made with heirloom corn grown by the Ute Mountain Ute Tribe, celebrating Colorado’s local agriculture through a vibrant, heritage-driven lens.

Tommy Lee is a Denver-born chef, restaurateur, and the cofounder of Molino Chido. After building a reputation in Colorado with his acclaimed restaurants Uncle and Hop Alley, his latest project brings a sharp, intentional approach to heritage-inspired cuisine. In partnership with Michael Diaz de Leon, Tommy combines his extensive hospitality background with a focus on local agriculture and vibrant street culture. A central figure in the region’s food scene, he was named a James Beard Award Semifinalist for Outstanding Restaurateur.
