Bienvenido

  • Private transfer from Oaxaca Airport to the beautiful new Becino boutique hotel from Boulenc in the center of town
  • Welcome cocktails at the hotel with your hosts
  • Downtown with friends: a laidback crawl of our friends’ bars and cantinas in Centro
  • First dive into the beauty of deep Oaxacan cuisine with a private dinner exploring Istmo and Valles Centrales culinary traditions at Chef Rodrigo Amaury’s Nois

Building Blocks of the Cuisine

  • Oaxacan market essentials, from Cocina de Humo to the central market, with the legendary Omar Alonso of Oaxacking: walking, tasting, learning
  • Siesta at Becino, which is completely ours for the duration of the trip
  • Oaxaca’s most bespoke mezcal tasting at Knock Knock cantina
  • Dinner at the phenomenal, Bib Gourmand-winning Alfonsina, set in the courtyard of chef Jorge León’s childhood home

The Eclectics of Villa de Etla

  • Breakfast at Boulenc
  • Travel down-valley to the town of Villa de Etla, a creative and culinary engine for all Oaxaca
  • Meet our friend Leo at the Villa de Etla Market to grab ingredients for lunch
  • Hands-on barro sculpting masterclass and rustic afternoon cookout at the Etla countryside studio of renowned ceramic artist Isabel Sánchez
  • Whiskey tasting at the incredible Maiz Nation, defender of indigenous corn varietals and leaders in sustainable distilling practices
  • Walk through the beautiful El C.A.S.A. Museum, considered the first center of ecological arts in Latin America
  • Relax back at Becino with optional Lechoncito de Oro tacos

The Mushroom Mountains

  • Breakfast of the best tamales in the cosmos at the Sánchez Pascua market with Cande Minerva
  • Head to the mountains for the night (no need to check out of our hotel in Oaxaca City, we’ll keep our rooms)
  • Arrival in the cloud forest mecca of Cuajimoloyas, chocolate and bread with our host Marta Contreras
  • Forage! Mushrooms in September in the Sierra Norte are one of Mexico’s great culinary treasures, and renowned traditional mushroom hunter Marta will take us to her favorite collecting spots
  • Special trout lunch in the cloud forest with Marta’s cousin
  • Siesta in our forest cabañas
  • Making amarillo at the cabañas and some late-night bonfire and chill at our rustic, comfortable cabañas

5

The City of the Dead

  • Wake slow, wander the woods, enjoy a breakfast of mushroom quesadillas and Suculenta preserves at the cabañas at over 10,000 feet
  • Mid-morning we head to Mitla, one of the most sacred villages in Mexico, birthplace of corn, portal to the underworld
  • Cave visit and storytelling with Carlos of Coyote Aventuras
  • Late lunch and sunset chillout looking over the fields of agave with Emir of La Fortaleza in Mitla
  • Return to Oaxaca City for cocktails and light bites at our luxury hotel

Deep Mexico

  • Wake early! Rare private dawn at the Monte Albán Zapotec pyramid complex, one of the most important archaeological zones in Mesoamerica
  • Head to the legendary cattle market el Baratillo in San Antonino Castillo de Velasco for traditional barbacoa and empanadas de amarillo for breakfast
  • Onward to Santa Catarina Minas for a mezcal tasting and tour in the home and palenque of Eduardo “Lalo” Angeles, one of Mexico’s most famous mezcaleros, at the iconoclastic, renowned Lalocura Mezcal
  • Free time in Oaxaca City for shopping, sipping, or siesta
  • One last great meal, a private dinner for our group with a renowned Oaxacan chef

El fin (for now)

  • September 26  ·  Saturday
  • One last beautiful Oaxacan breakfast of tacos del carmen alto breakfast if your flight allows
  • Private transfer back to Oaxaca Airport
  • So long, may you visit the magical Valles Centrales again

Restaurateur, fermentation guru

Our host in Oaxaca is Ana Paulina Garcia, the amazing co-owner of the cultish bakery Boulenc and fermentation shop Suculenta. Originally from northern Mexico, she has made waves in the city’s rich gastronomic scene by transforming Oaxaca’s teeming biodiversity into a wild range of ferments, from cardamom honey and mushroom pate to pumpkin relish and oil infused with local herbs. We can’t think of a better guide to bring us through the city’s bountiful markets, craft studios, and aromatic culinary enclaves. On day three, she’ll even bring us up into the mountains of Cuajimoloyas to hunt mushrooms with her friends and dine on rich mountain cuisine by the wood-fired chimenea.
