  • First night dinner at Rosetta, one of the World’s 50 Best restaurants 2023, the elegant Roma jewel of chef Elena Reygadas
  • Joining us at dinner will be Sophie Avernin: sommelier, winemaker, writer (who also selected our unhosted bar for us at Casa Pani).

  • Early rise today for a glorious morning on the chinampas, the last remaining pre-Hispanic laguna landscape in CDMX. Cafe de olla at sunrise in the pre-Hispanic glory of Xochimilco
  • Keep heading south, to the volcanic plains of Ayapango, where we’ll spend the day and night at the Hacienda San Andrés, an agricultural pillar of the region since 1535, now reimagined in the hands of chef Marco Margain.
  • Siesta, of course.
  • Happy hour looking out over the fields of maize toward Mt Popocatépetl
  • A full traditional Barbacoa, including lamb slaughter for those who want to witness the sacred sacrifice of this life-giving food source of central Mexico

Back to the Capital

  • Wake warmly with the frost outside, have a gorgeous rural breakfast at Hacienda San Andrés
  • Head slowly back toward CDMX
  • Optional downtime at Casa Pani or shopping in some of Mexico City’s great boutiques in Roma Norte
  • Big last dinner at our private space in Roma Norte featuring mezcal tasting and a special menu just for us by Edo Nakatani, exploring the deep relationship between Mexico and Japan, on the plate and off
  • Optional late-night cantinas and pulqueria crawl, drinking and visiting the classics with our new friends
