Ginisang Puso Ng Saging in Manila
A few years ago, three members of the Filipino street-art crew KST and I were asked to create a mural in Manila. Using spray paint and various photographs I had taken around the city, we completed our collaboration and decided to continue working throughout the night.
We ventured through the streets of Manila. After a long night of exploration and creation, we woke up to a nutritious brunch consisting of Red Horse Beer, spaghetti, mini hot dogs, a pitcher of orange juice mixed with GSM gin (basically paint thinner) and, to top it all off, a side of sautéed banana hearts (ginisang puso ng saging).
The creamy banana heart sauté was the highlight of the meal, with the consistency of a thick curry and just the right mixture of salty and sweet. The other portions proved more challenging. With temperatures reaching the mid-90s by 11 am and the effects of a hangover still lingering, finishing the bland-tasting spaghetti and rubber-based hot dogs that one could chew forever seemed like an impossible task.
Enter the cold Red Horse beer. Dislodging the heavily processed ingredients stuck in my mouth, it saved the meal and cured the effects of the hangover. To top it all off, the cold GSM gin—combined with the Filipino version of Tang—provided a kick to the end of the feast, making the sweltering temperature almost bearable.
