This Tuesday June 25 we are celebrating Anthony Bourdain @sujeomadison. His impact on me personally was one that he was always kind, funny, curious, and respectful. On his show and in his writings it always meant a lot to me but the ones that meant the most to me were in Vietnam. You could tell how much he loved that place, it’s people, and especially it’s food. I always loved watching him experience a “bowl of something good” and wondering and wanting to experience that myself. When he was last in Vietnam and brought President @barackobama to a food stall to get bún cha was a mic drop moment. A crowded room of local folks sitting on plastic chairs with the two of them sipping beers and slurping noodles right along with them. I was like “yo, Asians don’t give af, just bring me my noodles 😂”. When thinking about #bourdainday I knew I wanted to make bún cha. Pork meatballs and grilled pork in warm nuoc cham with pickles and herbs and thin vermicelli rice noodles and chili. All proceeds from the bowls we serve will be donated to Journey Mental health center. If you don’t make it in, I hope you do go somewhere or make yourself a bowl of something good, take your shoes off and toast to living your best life and the man who opened so much of the world to all of us.

What you see here is #Beriuni. Not to be mistaken with Indian dish, Beriani. This Iranian Beriuni is the local dish from the incomparably beautiful Isfahan, in the heart of #Iran.⁣ ⁣ Beriuni is a dish you can only eat out, due to its long process of cooking. As the gentleman in the video explains in the sweetest Isfahani accent, first the entire lamb is cut into 8 large pieces which are boiled, and then deboned. The cooked meat is minced and cooked again with the fat from the lamb, and then formed into a patty, and grilled in a tiny pan. A little fatty mixture of lungs (and maybe other innards?) is on the side for those who want it. Everything is served on fresh Sangak bread, with more fatty broth, saffron infusion, almond, pistachios and barberries. The side delicacy is the broth, with chunks of bread, Kashk (fermented yoghurt), cinnamon, saffron & some dried fruit. ⁣ ⁣ You might have seen @anthonybourdain eat this dish in his celebrated #PartsUnknown series. In his intense life, Bourdain inspired many souls through travel and food, but I will forever be thankful to him for restoring the humanity to the Iranians pictured on western media, specially somewhere like @cnn.⁣ ⁣ This is not something to take for granted, ever, but specially now, the drums of yet another war are beating, and no one seems to care that on the other there are people who just want to live, work, get to the end of the day, and not die, but the foreign bombs, after a mere 3 decades after the last war.⁣ ⁣ What Bourdain used to do was to never take for granted, because there are still other gifted and well known food writers who do travel to Iran, and their story is still as “colonial” as it would’ve been 50 years ago.⁣ ⁣ Here’s to the man who went beyond this. And to this people, and that war may be far, far from them. And that good things would come for them, too, finally. It’s been so long.⁣ ⁣ #BourdainDay #LabNoonInIran

June 25 is #BourdainDay , This was last year in Fire Island. Started the day with the news of @anthonybourdain ,the whole day while prepping for a #Kamayan cook out, he never left my thoughts. This sunset video was right after I cried my eyes out still not believing that he’s gone. Assisted by @verbena_lemon we cooked for 3 hrs in the kitchen. Sharing #Kamayan with 16 ppl with some who have never tried Filipino food let alone #Kamayan was an honor, just what @anthonybourdain would’ve done. We dedicated the dinner to him, we ate with our hands, shared how much we are all moved by him. "If I'm an advocate for anything, it's to move. As far as you can, as much as you can. Across the ocean, or simply across the river. Walk in someone else's shoes or at least eat their food. It's a plus for everybody." @anthonybourdain @roadsandkingdoms

Yes that’s my luggage between me and the driver Nzuve. And yes I have a belly full of the best bhujia and mutton and pani puri I may have ever had, in Diamond Plaza, with @vibratehaya and crew. With the same audio equipment sitting in my luggage in my lap on the bodaboda, I recorded five episodes of @thetrippodcast here in Nairobi, coming out in late summer, and they are all pretty great and the only thing that sucks, besides the way I look in an oversized Uber helmet, is that I have to leave. In Pasta Pane Vino, the last book R&K published with Bourdain, he had this little snapshot to offer in the intro: “Careening through Rome, late at night in a taxi, half-swacked on negronis, listening to Mina, remains magic. To lay eyes on a bowl of Cacio e Pepe, a plate of trippa, agnolotti, urchins in season, porchetta… that’s some powerful shit.” One thing Tony never wanted to see in Rome was some hotshot chef fucking with his carbonara, so it’s only fitting that this guanciale-inflected tribute comes from Roscioli, a Roman institution serving one of the city’s finest carbonaras.

Great to see Pinoy love—when Roads & Kingdoms’ collaborator Kate Kunath shot with Tony in Manila a year and a half ago, he was mobbed by fans wherever he went. And anyone who has seen his shows from there knows that the feeling is, well, super-mutual.

There was a lot of love between London and Tony, though it does always make you think about Tony’s big affection for chef Marco Pierre White, who made his career in London.  Solid duo, not least for the great 70’s hair legacies they both gave the world.

Really digging this tribute sketch from  Salt Lake City-based artist Julie Fesko Penman. Not just because it’s good, but because it reminds us a bit of Tony’s sketch styles (though obviously at a professional level). If he ever got stuck in a recording session or anywhere he had to sit tight, he would either tap his fingers manically, or, if he had access to a pen and paper, would rip off these messy, great little doodle illustrations.
